Italian Chopped Salad

Instructions

  1. Prepare the lettuce.
    Chop a head of iceberg lettuce into bite-sized pieces and add it to a large mixing bowl.
  2. Add the red onion.
    Thinly slice/chop red onion and add it to the lettuce.
  3. Prepare the meats.
    Chop the pepperoni and salami into small pieces. Add both to the salad.
  4. Add the cheese.
    Cut the cheese into small pieces and add it to the bowl along with the lettuce and meats.
  5. Prepare the banana peppers.
    Chop the banana peppers into small pieces. Some of the banana peppers are incorporated into the dressing, while the rest go into the salad.
  6. Make the dressing.
    In a measuring cup, combine the creamy dressing ingredients shown in the video. Stir in chopped banana peppers and mix everything together until well combined.
  7. Dress the salad.
    Pour the prepared dressing over the salad.
  8. Toss everything together.
    Use salad tongs to thoroughly toss the lettuce, meats, cheese, onion, banana peppers and dressing until evenly coated.
  9. Serve immediately.
    Transfer the salad to a bowl and serve.

Taco Salad Jars

Taco Salad Instructions:

  1. Brown the ground beef in a skillet over medium heat. Add taco seasoning and cook through. Let cool slightly before layering into jars to prevent the lettuce from wilting!
  2. Dice the tomatoes and red onion, chop romaine, rinse black beans and corn.
  3. Make the dressing by adding Greek yogurt, hot sauce, olive oil, and lime juice to the bottom of the jar. Stir to combine.
  4. Layer the ingredients in this order:

Black beans
Roasted corn
Red onion
Tomatoes
Ground beef
Romaine
Cilantro, cheese, and crushed tortilla chips go on top

This order keeps ingredients crisp and prevents sogginess.

Enjoy or keep sealed in the fridge for up to 3 days. When ready to eat, shake well and enjoy straight from the jar or pour into a bowl.

Healthy Chocolate Chip Zucchini Muffins (Gluten Free!) Instructions:
 
  1. Preheat the oven to 350 degrees F. Line a muffin tin with 10 muffin liners and grease the inside of the muffin liners with nonstick cooking spray to prevent sticking. This is critical to making sure the muffins don’t stick to the liners.
  2. Shred and measure out zucchini, then place in a paper towel or cheese cloth and squeeze out all the excess moisture. Add zucchini to a large bowl, along with maple syrup, eggs, olive oil, almond milk and vanilla extract. Mix until well combined.
  3. Next add dry ingredients to the bowl with the wet ingredients: oat flour, almond flour, baking soda, cinnamon and salt. Mix until combined. Fold in the walnuts and chocolate chips.
  4. Evenly divide batter into prepared liners. Bake for 23-28 minutes or until a toothpick inserted into the middle comes out clean. After 5 minutes, remove muffins and transfer to a wire rack to finish cooling. Enjoy!
  5. Sprinkle tops with fancy sea salt and drizzle with nut butter, if desired.
 
Honey Lemonade with Mint Instructions:
 
  1. Wash the lemon.  Roll the lemon back and forth on your counter with some pressure before cutting to get more juice.  Squeeze the lemon.  Strain the lemon juice if you like.
  2. Pour the lemon in a glass( or in a jug if you multiply the amount and make for a crowd) and add the honey, mix well.
  3. Pour the water and stir. Add the mint leaves and keep in the fridge to let it cool at least for 30 minutes and absorb the flavors.  Add the ice cubes and lemon slice and enjoy!  If you like you can drink immediately but the aroma will be stronger as you keep the lemonade in the fridge longer.  If you are sick, let the juice absorb the mint at room temperature for some time and enjoy your drink immediately to get the all the nutrients.

“No one is talking about my street. It is gone, every house burned to the ground. 53 years we lived there and know it’s gone.” From a sweet woman we met today. She was doing her laundry in a house dress. She grabbed a pair of shoes and the cats as they only had 15 minutes to evacuate. They were certain they’d be able to return.

In case you haven’t seen, Spokane is facing 3 fires right now, with 65,000 evacuees. It has been so heart wrenching and amazing to watch this community come together to provide for those who need the love and support💕

Local businesses and community members across the city have come together to fundraise, host resource drives, and even host evacuees who lost their home to the fire. With the essentials now covered, my friend Lori and I visited to try and bring a little light and hope through flowers to this dark week☀

Thank you Melissa and the flower team at Rosauers for helping us make this happen on such short notice! It really made people’s days🥹
