Ingredients
2 English cucumbers, halved lengthwise
1¼ tsp. Sea salt or ¾ tsp. table kosher salt
2 Tbsp. unseasoned rice vinegar
1 Tbsp. toasted sesame oil
2 tsp. soy sauce
1 tsp. crushed red pepper flakes
1 tsp. Sugar
2 garlic cloves, finely chopped
1½ lb. firm cantaloupe, rind and seeds removed, flesh cut into 1″ pieces
¼ cup coarsely chopped cilantro, plus more for serving
1 tsp. toasted black or white sesame seeds
Step 1 – Prep the fruit
Cut the cucumber and cantaloupe into bite sized (1”pieces) and mix together evenly.
Step 2 – Build your vinaigrette
Add together the salt, sugar, pepper flakes, sesame seeds, and mix. Next add the rice vinegar, sesame oil, soy sauce, garlic, cilantro, and mix.
Step 3 – Combine
Add together the fruit and vinaigrette and mix well. Top with extra sesame seeds and cilantro as needed, and serve.
