Kinder’s Cowboy Butter Seasoning on Steak + Ranch-Style Cowboy Caviar Bowls

Ingredients:

Cowboy Caviar

    • 1 (15-ounce can) black beans, drained and rinsed
    • 1 (15-ounce can) black eyed peas, drained and rinsed
    • 4 Roma tomatoes, seeded and diced
    • 2 cups sweet corn, from frozen, canned or grilled
    • 1 green bell pepper, diced
    • 1 large avocado, diced
    • 1 jalapeno pepper, seeded and diced
    • ½ cup diced red onion
    • ½ cup chopped fresh cilantro
    •  

Cowboy Caviar Dressing

  • ⅓ cup extra virgin olive oil
  • 3 tablespoons fresh lime juice
  • 1 teaspoon honey
  • 2 garlic cloves, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground black pepper

Instructions:

  1. Combine the ingredients. Add the black beans, black eyed peas, tomatoes, bell pepper, avocado, jalapeno pepper, red onion, and cilantro to a large mixing bowl.
  2. Make the dressing. In a small bowl, whisk together the olive oil, lime juice, honey, garlic, salt, cumin, and black pepper.
  3. Stir together. Pour the dressing over the cowboy caviar and stir together.
